Having an on-hand supply of spicy tomato sauce, spinach & eggs makes nursing a hangover fairly simple. But even with wicked repercussions, Hangover Eggs are quick, tasty, effortless and more-or-less easy to face, even when your hair hurts.
Eggs are rich in cysteine, which breaks down acetaldehyde, a hangover-causing toxin that idles in the liver depleting the glutathione. Glutathione is an antioxidant and detoxifier, but also a natural stimulant; when alcohol lessens the glutathione, the body makes up for it by producing too much. So, when alcohol’s depressing effect makes the body tired, the overproduction of glutathione simultaneously increases the body’s blood pressure, brain activity and anxiety, aka. restless sleep. Eggs sop up the toxins.
Tomatoes have lycopene, a strong antioxidant carrying twice the cancer-fighters of beta-carotene. Tomato sauce has concentrated amounts of lycopene (more so than raw tomatoes), and olive oil to help the body to absorb it. Not necessarily a hangover cure, but when dosed with spicy chiles, it’s comforting & calming. A mini-stockpile can easily be stored in buckets or zippies in the freezer for convenience.
Spinach does a world of good -- fights cancer, heart disease, blood pressure and vision loss. It’s a great source of iron & B vitamins. Again, not a hangover cure particularly, but there’s something natural about chewing on leaves when feeling a bit unnatural.
And, never underestimate the power of water, ibuprofen and a good multivitamin -- they help... especially when falling snow is unbelievably loud!
Simple dish but delicious.
